Dominique Aufrere is based to the east of Chablis in Fleys. The domaine was created in 1973, and fully modernised in 1992 with the installation of temperature-controlled cuves, and no oak is used here. He has 13 hectares under vine producing:
- Bourgogne Chardonnay
- Chablis
- Chablis VV (60 yr + vines)
- 1er Cru Vaucoupin 0.64 ha
- 1er Cru Les Fourneaux 1.22 ha
- 1er Cru Mont de Milieu 1.50 ha

We hold stocks of Chablis VV & Vaucoupin at London City Bond but all the wines are available groupage or ex cellars. These are very pure wines that are extremely well priced.

Christian & Fabien Moreau launched their family domaine with the superb 2002 vintage to instant critical acclaim. This however is only to culmination of a fascinating history to date that began in 1814 as grape growers and subsequent creation of the famous firm of J Moreau.
Their vineyards could not be in better locations and include:
Grand Cru – Les Clos & Clos des Hospice, Valmur, Vaudesir and Blanchot.
Premier Cru – Vaillons. Chablis and Petit Chablis
The grapes are hand harvested, sorted and moved in the winery by vibration to avoid oxidation.
From the sorting table they are pressed in one or either of two pneumatic presses before being transferred to vats ranging from 20 – 50 hectolitres enabling vinification in small quantities and parcel by parcel. These wines are available in small quantities but are truly superb.
